We don't believe in shortcuts. Every single ball of dough we serve undergoes a meticulous 24 to 48-hour fermentation process.
By allowing the dough to rest and develop slowly, we create a crust that is incredibly light, airy, and easy to digest—featuring the classic charred 'leopard spotting' that only comes from high-quality hydration and 500°C heat.
Combined with San Marzano tomatoes and creamy Fior di Latte, it's the authentic taste of Naples, right here in Scotland.
